Inca Mex: A Mother-Son Duo Bringing Peruvian Flavors and Mexican Treats to the Valley

Phoenix is a city that shines for its diverse food scene, and one of its newest culinary gems is Inca Mex, an eatery serving Peruvian cuisine and Mexican treats. Open for just about a year, the eatery has already won over locals with its traditional dishes, warm atmosphere, and the family bond behind the business.

Inca Mex is the creation of mother-son duo, Sofia Vasquez and Charles Saenz. Sofia manages day-to-day operations, while Charles leads the way in social media and marketing. For Charles, working with his mom has been both a blessing and a learning curve. “I don’t know many people that would probably do business with their mom (laughs). It was rocky at first, only because we’re very similar – very stubborn sometimes. [But] it worked out – me and my mom have the best relationship, as a mom and son and as business partners now. We both have each other’s backs.”

For Charles, the inspiration for Inca Mex comes from his roots. “I was born and raised in Arizona from Peruvian parents. But my blood, my culture, my history, background, it’s all Peruvian. That’s what my family has shown me.” He recalls growing up in Gilbert, introducing friends to the flavors of Peru: “They loved it every single time. It was something new.”

The menu features classic Peruvian staples like ceviche, lomo or pollo saltado, arroz chaufa de carne, and chicharrón de pescado.

“A lot of folks come in [and]I always ask if it’s their first time [eating Peruvian food], so then I explain to them what kind of plates we offer. And they have all enjoyed them,” Charles explains.

But Inca Mex is more than just about food—it’s about connection. “Not just showing people that Peruvian food is good, but that we’re very loving people, we’re very outgoing. We’re nice. Like, let’s show the culture of Latinos in general, and have good food while enjoying it together you know?”

That philosophy has shaped the restaurant’s mission. “Our hope is that .. they leave with a good taste in their mouth – a good impression from us. That they can feel that the energy here, the atmosphere, is loving.”

The vision for the future is already growing. “I see Inca Mex eventually expanding. I do want to open up a second restaurant where it’s a little bit more high-end, more gourmet.”

For Sofia, the journey has been emotional but rewarding. “Right now, I feel at peace because we have gone through very difficult times, but I’m happy that we are moving forward with everything. Thank God we are growing.”

Adding to the family’s entrepreneurial spirit, they also opened Inca Cuts, a barbershop located right next door to the restaurant. With three barbers and a tattoo artist, it’s become another hub for the community.

As Charles put it best, the first year had its struggles, but the foundation is strong. “It’s a brand new brand, but .. it has had a very good response on social media. People come and take a bunch of pictures of all the artwork that we have inside, so it’s getting better.”

At Inca Mex, the food is delicious, the atmosphere is vibrant, and the family behind it is proof of what happens when passion and culture come together in the Valley.
