In the heart of Phoenix’s culinary scene lies the Lunch Box Cafe, a modest yet vibrant eatery founded by Chef Isidro “Chilo” Chacón. Originally from Chihuahua, Mexico, Chacón’s story epitomizes the American dream.
He emigrated to the Phoenix metropolitan area more than 30 years ago, started as a dishwasher, and steadily climbed the ranks. Eighteen years ago, he opened the doors to his restaurant, the Lunch Box Cafe – a cozy neighborhood spot beloved for its hearty Chihuahuan-inspired dishes.
“It was a hit from the very first day,” he said, “it’s a very simple, friendly neighborhood restaurant. Nothing fancy. I like the name of ‘the lunchbox’ because you never know what you’re going to find – it could be a sandwich, could be soup, could be anything.”
Popular menu items include their menudo, caldo de res, barbacoa, and more.
Beyond the confines of his kitchen, Chacón is deeply invested in his community, actively engaging in charitable initiatives to provide meals for those in need.”One of the things that I can do is provide a meal for them so they can at least for that one day, they have something decent to eat,” Chacón explains. “I just feel good about it. I just want to be able to help and make people feel better about themselves.”
He’s gained great prestige over the years, having the opportunity to cook for several celebrities along the way, from the likes of Kate del Castillo, Alejandro Fernández, Gloria Trevi, Sin Bandera, Raúl De Molina and more. However, it’s a humble encounter with Alexis Ayala that’s fresh in his memory.
“[He said,] I am tired but I’m blessed. The fact that I have a job, that I’m doing something. He was so humble when he said that,” he recalls fondly.
Beyond his culinary achievements, Chacón has embraced social media platforms and frequently appears on Univision and Telemundo, further extending his reach and influence. Additionally, he has ventured into furniture design, creating contemporary pieces that reflect his passion for craftsmanship and quality.
“It’s a beautiful line of furniture. It’s contemporary furniture that you could pass down to your kids,” he says, “it’s furniture that’s going to last a lifetime.”
Throughout his journey, Chacón remains committed to excellence in everything he does. Whether he’s cooking a meal, serving the community, or designing furniture, his authenticity and passion shines through.
“Just be yourself. Be original and be authentic when it comes to everything,” he said. “I’ve done my thing and I’ve just done it because it just comes out of my heart.”
